Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup raisins
- 1 cup dried cranberries
- 1 cup candied cherries, chopped
- 1 cup candied pineapple, chopped
- 1 cup pecans, chopped
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/2 tsp ground cloves
- 1/2 cup brandy (optional)
Instructions:
- Preheat your oven to 300°F (150°C).
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.
- In a separate bowl, mix together the raisins, cranberries, cherries, pineapple, and pecans. Add the dry fruit mixture to the butter mixture and mix well.
- In another bowl, whisk together the flour, baking powder, and spices. Gradually add the dry mixture to the fruit mixture, stirring until well combined.
- If using, stir in the brandy.
- Pour the batter into a greased and floured 9x5-inch loaf pan.
- Bake for 2 hours, or until a toothpick inserted into the center comes out clean.
- Allow the fruitcake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
