Basic Crêpes

Crêpes are thin, delicate pancakes that can be filled with sweet or savory fillings. Here is a simple recipe for making basic crêpes at home:

Ingredients:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter

Instructions:

  • In a blender or food processor, combine the flour, eggs, milk, water, salt, and melted butter. Blend until smooth.
  • Heat a large nonstick skillet over medium heat. Lightly coat the pan with cooking spray or a small amount of melted butter.
  • Pour a small amount of the crêpe batter (about 1/4 cup) into the center of the skillet, tilting the pan to spread the batter evenly.
  • Cook the crêpe for 1-2 minutes, or until the bottom is lightly browned. Flip the crêpe and cook for an additional 1-2 minutes on the other side.
  • Transfer the crêpe to a plate and repeat with the remaining batter.
  • Serve the crêpes warm, with your choice of filling.
