"Instant Doodh Jaleebi"
One of the most demanding cultural winter dish is Doodh Jaleebi..specially in Punjab..
So,u don't need to go outside in chilling weather..
U can easily make them at home in half an hour..!!
Do try this recipe.
U will definitely fall in love with it..
Recipe:
Ingredients For Instant Jaleebi:
Flour 1 cup
Gram Flour 1 tbsp
Ghee 1 tbsp
Orange color a pinch
Yogurt 2 tbsp
Yeast 1/2 tsp
Sugar 1 tbsp
Ghee for frying
Water As required
Method:
In a bowl.. Add yeast, sugar and 2-3 tbsp of warm water.. And let it rest for 5 minutes
In a big bowl add flour, gram flour, melted ghee, yogurt, orange color, yeast mixture mix well now add water as required . To make a thick paste .
Let it rest for 10-15 minutes (Not more than that)
After 10 minutes.. Heat the oil.
Keep your flame medium.
Now put the mixture in a bottle /piping bag.
And make spirals in hot oil.
Fry until golden brown..
Place Jaleebis in warm sugar syrup just for 1 -2 minutes.
Not more than that. (otherwise Jaleebis got soggy)
For Sugar Syrup (Sheera):
Ingredients :
Sugar 2 cups
Water 1 cup
Green cardamon powder 1/2 tsp
Lemon juice 1 tsp
Method:
In a pan add water, sugar and cardamom powder.
Cook until your sugar syrup (sheera) gets thick(One string)
Remove from heat ..
Add lemon juice and set aside..
Recipe For Special Milk:
Ingredients
Milk 1 litre Pack
Green cardamon powder 1/2 tsp
Saffron strands 6-7
Almonds 2 tbsp crushed
Pistachios 2 tbsp crushed
Sugar 3-4 tbsp(according to your taste)
Method:
In a pan add milk, cardamom powder, saffron strands, sugarhalf of almonds and pistachio.
Let it cook for 20 mins on slow flame. .
Until milk gets little thick..
Set it aside..
Assembly:
In a bowl add Jaleebis.
Pour hot/warm milk..
Topped with almonds
and pistachios
Served warm..
